Beef Tips with Mushroom Gravy Recipe

Tender beef tips smothered in a rich mushroom gravy, served over creamy mashed potatoes. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion meal.

Ingredients:

  • 1 lb beef sirloin tips, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the mashed potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper, to taste

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook until the mushrooms are tender, about 5 minutes.
  3. Sprinkle the flour over the mushrooms and onions, and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.
  4. Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
  5. Stir in the heavy cream and season with salt and pepper to taste. Return the beef tips to the skillet and simmer for an additional 5 minutes to heat through and allow the flavors to meld.
  6. While the beef tips are simmering, prepare the mashed potatoes. Place the peeled and cubed potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  7. Add the butter and milk to the pot with the potatoes. Mash until smooth and creamy, adding more milk if necessary to achieve your desired consistency. Season with salt and pepper to taste.
